Chinese BBQ Char Siu

A rich and tender Char Siu recipe using Hannay's Chinese BBQ 300ml, perfect for slow-roasting or pan-searing to a sticky, toffee-like finish.

Serves 4 to 6 people

Ingredients

  • 1 kg pork shoulder or belly cut into 4 to 5 cm cubes
  • 1 bottle of cider (Hunters or Savannah)
  • 1 teaspoon of garlic
  • 300ml Hannay’s Sauces Chinese BBQ

Method 1: Oven Roast

  1. Mix all the ingredients in a deep heat-resistant tray and cover with aluminium (tin) foil.
  2. Let it marinate for a couple of hours in the fridge.
  3. Roast in a pre-heated oven between 120°C to 140°C for 2-3 hours, whilst constantly checking, tossing and turning to caramelise on all sides. Keep the tin foil on to keep in the moisture till the meat is super tender.
  4. After several hours, remove the tin foil and crank up the heat to about 170°C to get some charred and crispiness. This will also reduce the sauce to a toffee-like state. You can add water or more cider should you prefer more sauce instead.

Method 2: Pan Seared

  1. Grill or pan sear the pork until you achieve crispy rendered pork fat and rind.
  2. Rest for 10 minutes and cut into equal size cubes.
  3. Cover with the remaining ingredients (cider, garlic, Chinese BBQ sauce) and slow simmer for 20 to 30 minutes on medium heat.
